The best monitors to use with a Mac are of course Apple monitors. The biggest you can fit on your console and budget. Let the guys at the genius bar hook them up for you and get the monitors set up.

Touchscreens may be a bit more difficult because AFIK there is no native support for two touch screens.
There may be third party support for touch screens or touch overlays.

Apple stopped making monitors a couple of years ago. Sorry.

Yes, I know. They are LG monitors. They unfortunately do not compare (IMO) to the monitors Apple used to make. There have been some rumors on the Apple forums that say Apple may yet again build a monitor. Time alone will tell, I was sad to see that Apple has stopped making their AirPort series of WiFi hardware too. Not enough profit in them I guess.

Touch-base supports a wide range of touch screen displays for the Mac. It includes multiple monitor support. https://www.touch-base.com. Prices shown on the website are substantially discounted for home, non-commercial use.

I am using two Faytech monitors which are of a generic variety with eGalaxTouch drivers. While the drivers are free, will work with many monitors and are readily available on the internet, the release of driver updates may be two years behind the latest Apple operating system (presently Sierra is supported).

The "Gold Standard" for Mac are ELO screens and drivers. You will however need real gold to pay for them.

Today I have received and installed a touch monitor ViewSonic TD2220-2 (21.5”) and it works fine using the Touch-base drivers. I have only one monitor and my computer is a MacBook.

For one monitor you often even do no need the Touch-Base drivers. Although not officially supported, it often works out-of-the box.
