The Organist's Hymnbook by UK teacher Anne Marsden Thomas has a compilation of 160 well known hymns written out with fingering and pedalling. Each hymn is written out in two versions, the first with the literal rhythm and note values which enable an organist to lead a congregation effectively, and the second as it would be in a hymn book. Both versions have the pedal line on a seperate stave with the tenor line in the left hand. I have found this an extreemly useful book for general organ practise, consolidating independence of hands and feet. I don't know how to include a link, but just Google her name with the title.
