But seriously, what parameters of organ sound do you imagine would be
good to control, independently, polyphonically, per key?

A Hyperkeys® can handle 3 dimensions in real time. Some parameters - LFOs in synthesis,
for example - don't generally sound good when varied polyphonically. Difference frequencies from Hell.

I would appreciate any suggestions you might have. We are going to do
some experimenting tomorrow, Columbus Day.
