I love the Zöblitz. I must say I did a lot of voicing to make it fit my sound system and personal preferences. If you want to cut back on the brilliance the easiest thing to do is to lower the pitch. I prefer a=430 myself.
I did quite a bit of voicing. I made the second manual a bit softer to balance better with the 1st manual. I cut back the mixtures quite a bit. I made the pedal 16' and 8' a couple of notches louder. With the voicing feature you can manipulate the loudness and the brilliance of individual stops. It may not be authentic, but it makes for a more satisfying result for me. You can also correct the tuning of individual notes. You need Hauptwerk advanced, I believe.
To cut down on brilliance in plenum registration it can be helpful to omit the 2'. To add to the plenum add the 8' flute, quint, and cornet, which serves as a trumpet! You can also use Hauptwerk's couplers to send the 8' flute of manual at 16' pitch to manual 1.
Also for the energy level and amount of resonance the premium edition of Zöblitz has a feature to adjust these. It's a fader that allows you to hear the organ from different places in the church. This is great for variety!
It's a wonderful instrument for Bach and Buxtehude. And CPE Bach! The great thing about this organ is that every stop works with every other stop. The possibilities are endless.
