I don't have Regensberg or Görlitz, but I think you would find them similar. Görlitz has more original baroque material, but it was a pretty forward thinking organ, and these days it's more of a neo baroque concept. Regensberg is just like that as well, but even more neo baroque, as it was built more recently. It has some "essential" stops to play romantic repertoire, but I don't think it will satisfy a lover of Cavaillé-Coll. If you want a German Cavaillé-Coll, as I see it there's two camps; admirers of Sauer, and admirers of Walcker. I'm in the first camp, but you can get Hauptwerk sets of both. Sauer studied with Cavaillé-Coll, and his organs have more colour and romantic personality, while still being thoroughly German. Walcker, however, was a bit more conservative, and incorporated a bit more baroque balancing and timbre (which makes playing Bach for instance easier, but in my opinion makes the organ less interesting).
My favourite Sauer is the Chemnitz. It has a nice darkness to the reverberation that I think is perfect. However, I've only ever played the demo!
If you want a Dutch Cavaillé-Coll, the Bergen op Zoom is great. It's much closer to a French Romantic instrument though.
