I've been using a Lenovo Yoga 720 (2-in-1 laptop) with a 15" screen for that purpose quite successfully for several years.

No, I’m sure your iPad is a great choice. But I think a screen with electronic ink is better for the eyes. In addition, with the e-readers I mentioned above, you can synchronize them in pairs and display two pages at the same time. The Pad Mu even allows it to be done in landscape orientation.
