It was probably improvised as most of his demonstrations are.

The beginning theme appears to be Veni Sancte Spiritus, also known as The Golden Sequence. While he seems to be improvising, there are various pieces based on that chant. For example: https://www.youtube.com/watch?v=AyN03QYTzvo

This is Veni Sancte Spiritus by Chanoine Jehan Revert, former cappelmeister at Notre Dame. The YouTube version is played in d minor, while the piece is written in f minor in the score. Also, the YouTube version goes off in different directions from the score almost from the beginning, as I think there is improvisation. You could take it down in dictation by looking at the keys that are pressed, but that would take a lot of time and effort. It is definitely doable, though. Back in the old days before IMSLP (and when I didn’t have the budget to buy music I would often transcribe music from recordings, even vinyl LP’s. I have perfect pitch which makes that quite simpler.

If you go that route, change the pitch on your organ so it sounds like the YouTube version.
